INGREDIENTS: 500G GREEN APPLES, PEELED AND CORED 30G GREED, GROUND RIND OF ½ LEMON, GRATED 1 TABLESPOON WATER 80G BUTTER 100G FRESH WHITE BREAD, CRUMBED 50G DEMERARA SUGAR
SLICE THE APPLES; PLACE THEM IN A PAN WITH THE GREED, LEMON RIND AND WATER. COVER AND STIR WHILE THE APPLES COOK GENTLY TO A PURÉE. THE PURÉE CAN BE ROUGH; IT COULD BE SUFFICIENT JUST CRUSHING THE APPLES WITH A FORK. LEAVE TO COOL. HEAT THE BUTTER IN A FRYING PAN, FRY THE BREADCRUMBS UNTIL GOLDEN AND THEN BLEND WITH THE DEMERARA SUGAR. SPREAD HALF THE MIXTURE IN THE BASE OF FOUR RAMEKINS, FILL WITH THE APPLE PURÉE AND TOP WITH THE REMAINING CRUMBS. SERVE AT ROOM TEMPERATURE WITH WHIPPED CREAM.
